One morning last summer, I was feeling rather lazy, but rushed. It was 6am and I had to be on the road in less than 30 minutes to make it to the "big farm" on time. I was the Nursery Manager & Farmer-Florist and it was Friday, which meant BIG harvest for the weekend's markets. Being late was not an option.
I was rushing and didn't feel like making lunch. So I grabbed what I could find...a container of leftover roasted beets from the night before, some cheese, mayonnaise, 2 slices of bread, a drink, and I was out the door. I figured I could slap together a sandwich of sorts when lunch time came around. Little did I know, I would discover that afternoon how much I loved beet sandwiches.
A year later, hankering for a beet sandwich, "I took it up a notch", as a true chef would say and came up with the burger below...
6 Large Red Beets, skinned & sliced
2-3 Medium Hakurei or White Egg Turnips, skinned & sliced
2-3 Medium Cippollini Onions, sliced
1/4lb Salad Mix (a few leaves for each sandwich)
2 Slices of Cheese, each cut in quarters
8 Slider Hamburger Buns
1 TBS Butter
1 TBS Olive Oil
1-3 Garlic Scapes, diced
Salt & Pepper to taste
This is a super simple sandwich, that doesn't skimp on delciousness and it's perfect for "Meatless Mondays" (or any other day of the week). ;) I would recommend using slider buns, as I did not have any, so I used a circle cookie cutter on bread to make my own mini-buns. hahaha
1. Preheat oven to 375°F. Skin and slice turnips & beets, lay in a single layer on a cookie sheet, drizzle with olive oil, and sprinkle with salt & pepper. Bake for roughly 15-20mins, basically until a fork easily pierces through the root veg. Lay a piece of cheese over each beet slice and allow to melt.
2. Melt butter & sauté scapes & onions together until caramelized.
3. Build your burgs. Slather buns with mayo, add lettuce, slices of beets, turnips, and top with caramelized onions.
I did 2 beet slices + 1 turnip slice to each sandwich, but it's your burg, build it Fudrucker's style, in other words, your own way! Does anyone remember Fudrucker's? :P
